more rocky road

So the scales are still telling me I’m still fat and are not budging! So instead of eating carrot sticks and hummos I made a batch of rocky road! Because didn’t you know that diet coke and rocky road cancel each other out? Oh yes. Now, also the kids can make this which counts as an activity to keep them busy and a special afternoon tea treat as well.  I’m all about keeping them busy at the moment as big miss finishes up preschool this week. So here are 2 more versions of rocky road…here is old faithful:

easy rocky road

375g milk or dark chocolate melts
100g mini marshmallow bag
1/2 cup sultanas

Melt your chocolate. I do mine in the microwave for 2 minutes on medium stirring a couple of times. Add in marshmallows and sultanas and pour into lined lamington tin. Refrigerate for an hour then slice. And now here it is a little bit more fancy. You could use any nut you like really but I’m quite partial to a pecan or ten.  Follow the same instructions as above but using the following ingredients.
fancier rocky road

375g dark chocolate (I use nestle melts)
200g marshmallows  (not mini)
1/2 cup chopped nuts
1/2 cup sultanas

So I put it in those pretty tumblers again, I have more as I sent retro daddy out to get me another 6! A  few of you have been asking me where I bought them. I got mine at Akita here (lovely little store, no website) but they are called JAB tumblers if you wanted to track them down. Enjoy…………..but don’t come back to complain I’m not helping your waistline either! All care taken, no responsibility accepted!

  5. I picked up a few tumblers in The Design Store in Mosman (just at Spit Junction) for $3.95. I need to give this rocky road away soon before I eat it all!

  6. My two year old, Felix, and I made white rocky road on Saturday when we put our Christmas tree and decorations up. It was all about easy indoor activities as it sweltered to something like 38 here in Adelaide!

    I can’t believe how much, and how badly, I am eating lately. The 10kg rapid weight loss I experience 18 months ago when my husband suddenly walked out has almost been put back on again!

  9. OK, I definitely need to make more rocky road. I recently had a craving and cobbled one together from things in my pantry (marshmallows, dark choc, glace cherries and choc ripple biscuits). I’ve been to Coles since and I’m ready to go again.

  11. Mmmmmm….YUM! I’ll have to make these. My dieting is stalled until after Christmas :P.
    Don’t worry about the weight as my old country doctor (60 plus years old) told me 20+ years ago that it takes about 6 months, especially if your breastfeeding, for your body to get over the changes and that dieting straight after can affect the nutrition in your milk. He told me “enjoy your baby first”…. so I did :D!
