an aussie classic…

that would have to be lemon delicious! I had some lemons hanging around and decided to whip up one of my all time favourite desserts! This particular recipe comes from another aussie classic, an Australian Woman’s Weekly cookbook…..but I do have it memorised, so sad I know.

3 eggs separated
1/2 cup caster sugar
1/3 cup lemon juice and 2Tbsp lemon rind (I used 3 average sized lemons today)
1 cup milk
30g butter, melted
1/2 cup SR flour sifted
extra 1/2 cup caster sugar

Preheat oven to 180 degrees. Beat egg yolks and 1/2 cup sugar till thick and creamy then add in butter, milk, lemon juice and rind and the sifted flour. Whisk egg whites until soft peaks form then beat in extra sugar. Fold into lemon mixture in 2 batches. Pour into greased ovendish (I used a 6 cup round dish) or individual ramekins. Place in bain marie ( I use my lasagne dish half filled with boiling water) and bake for about 50 minutes until cooked. Serves 4 but generally serves 2 adults in this house!

Now mine is looking a little golden and its either because I used raw caster sugar or because I was bathing babies and left it in a wee bit too long. Either way it was delicious…..

  1. Looks yummy! I think I will have to give it a go.

  2. One of my all time favourite desserts. We ate that SO much growing up but I never tire of it.

  3. I know that recipe well!

  4. Yum! How funny, I picked lemons to make this exact same dish tonight and then got sidetracked with the kids. I have to make 1.5 times the mix for everyone to get their fill here. Its delicious.

  5. this looks divine, just like my mum use to make!

  6. I think I had nearly forgotten about that dessert. I’ll have to remember how I learnt about it.

  7. Looks soooo yuuummmmyyy!!!
I have saved your recipe to my blog so I can try it next time I feel indulgent.
Have you added custard to yours or does it come out that yummy and gooey?
    Andi :-)

  8. YUM! Haven’t had some for ages. Thinking this weekend. Thanks! xox

  9. Yum! What a classic. We had some “spare” lemons last week so guess what I made. I used Stephanie Alexander’s recipe for the first time but didn’t like it as much as the delicious magazine one (which I lost). I’ll have to try out your recipe (I love it when a recipe calls for melted butter – creaming butter always ends in tears and/or swearing here because I don’t take it out of the fridge early enough.

  10. ummmm lookss yummmmmmmmmmmmmmm..
    there goes my diet!

  11. Love this recipe too and I actually prefer it a little more cooked on top as it has a slight crunch. A wonderful mix of textures

  12. I have a craving for everything lemony at the moment, so I gave this a go! It was rather delicious, I could have eaten the dish it came in 😉
