cherry clafoutis

I actually have 4 french recipes to share with you this week. Sunday was dreary and retro daddy went into the office all day.  I was not impressed. I have replaced 4 letters of his employer with ‘crap’ when referring to it because we never see him. So to make myself feel better I decided to stay in my own ‘office’ and bake some yummy things.

And desserts don’t come yummier or prettier than cherry clafoutis. And actually they don’t come easier. This really is a simple dessert that can easily be made for a weeknight dessert or a fancy dinner party. It’s very popular here and I made this one after lunch so I could photograph it and it made for perfect afternoon tea. You can use a variety of fruit but I love the look of the pretty cherries. I just buy a large jar of morello cherries in the supermarket and they are perfect. This recipe comes from Around my French Table and has been adapted for the Thermomix.

1 jar cherries, stemmed and pitted
3 large eggs
1/2 cup sugar
2tsp vanilla
1/2 cup flour
3/4 cup full cream milk
1/2 cup cream
extra icing/caster sugar to serve

Drain cherries and lay out in the bottom of a well greased pie dish. Place sugar in TM bowl and process for 5-6 seconds on speed 8. Set aside. Add eggs to TM bowl and process for 1 minute on speed 3. Add sugar and whisk 30 seconds speed 3. Add vanilla, flour and whisk 1 minute speed 3. While machine is running add in milk and cream and process 30 seconds speed 3. Tap bowl on counter to remove some bubbles then pour over the cherries. Bake 35-40 minutes in a 180 degrees oven until slightly golden and cooked in the centre. Top with icing or caster sugar sprinkled over the top. This does not last long in our house and is delicious.

If you don’t have a thermomix then whisk eggs until foamy, about 2 minutes, add in sugar and whisk for a further minute. Add vanilla, flour and whisk for a further minute or two. While mixing pour in the milk and cream and whisk for a further minute. Tap bowl on counter to remove some bubbles then pour over the cherries. Bake 35-40 minutes in a 180 degrees oven until slightly golden and cooked in the centre. Top with icing or caster sugar sprinkled over the top.

  1. Oh Carrie, I do sympathise. DH came home yesterday to tell me he is going on yet another exercise – over the one weekend of the year I have had something scheduled on for over 12 months. Unhappy doesn’t begin to cover it.

    Perhaps a cherry clafoutis would improve things. I have already made a pretty good dent in the chocolate brownies I made on the weekend as self medication.

  2. Sometimes it feels like our men are at the mercy of their employer and it can get you down. Sunday! Part of the reason why hubby now works for himself. I just realized I have all those ingredients in the pantry, so I’m going to give this a go!

  3. Man its hard work when husbands are away alot and you do so extremely well with coping with day to day life. Maybe Retrodaddy could retire early with all those big payouts his boss will be giving him for working so many weekends!!! This looks so yummy too, I will have to buy some cheeries next grocery visit :)

  4. YUM! Seriously, how do you ever look after a baby and toddlers whilst cooking from scratch and making them clothes!? You should write a book on raising 4 little ones and how you manage it so well!

    Such a shame you have to fly solo on a weekend :( I take my hat off to you for putting up with it! My husband works strictly M-F 9-5 in North Sydney and even that seems like too long to be missing his babies growing up! Your husband’s employer should put far more value on family – might even make for happier, more productive staff!!!

    I feel for you with Retrodaddy working so hard. We have hardly seen our big daddy in this house for weeks :o( He works ridiculously long days, particularly at the moment with papers due and deadlines to meet. It is a hard slog for the Mama’s… but as I always say, I only have two, you have four! You’re amazing :o) xo

  7. You’re going to be the end of my waistline, Corrie 😉 I love how you’re converting everything to Thermomix for me. Cherries aren’t my favourite thing to eat by themselves but in this recipe … I think I could push myself.

  8. How lovely this looks, I’ve never made a clafoutis but have long wanted to so this could be the one. Please keep the Thermomix recipes coming as one is being delivered on Thursday!

    I do feel for you with the weekend-working hubby. Mine used to do that a lot. He has reformed in his old age thank goodness.
